I just moved in to a new place, all the network cables going to the jacks in the house were pulled to a Leviton box and left unterminated (and unlabeled). I thought I'd terminate them to a patch panel ...

Just ignore the colors and use the 586A way. All what the patch panel is, is a passive device that all your cable comes to, and is then packed down to your switch rather then directly to you switch.
